Vegetable chilli

preparation time 15 minutes

1 large(450g) tin organic chopped tomatoes
1 large tin (250g) kidney beans, drained and rinsed
2 diced courgettes
1 chopped onion
1 diced red pepper
1 teaspoon mild chilli powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil


  1. Add all the ingredients to a large non-stick saucepan and simmer, stirring occasionally, for 15 minutes.
  2. Serve with brown basmati rice or baked potato or baked sweet potato.
