Olive oil based dressings

Serves 4-6

Ingredients:
½ cup olive oil
½ teaspoon wholegrain mustard
½ teaspoon honey – preferably Manuka
½ tablespoon apple cider or Balsamic vinegar

Variations:
Fennel seeds
Cumin seeds
Horseradish
Pesto sauce
Tahini
Juice of half a lemon instead of vinegar

Instructions:

  1. Mix up ingredients in jug with fork
  2. To serve, drizzle over salad or mix in with salad vegetables immediately before eating
  3. Can keep, even make in larger batches and store in fridge
