Lentil curry

preparation time: 20 minutes

60g split red lentils
1 chopped onion
100g frozen sweetcorn
1 teaspoon Swiss vegetable bouillon powder
1 teaspoon mild curry powder
250ml boiling water

  1. Put all ingredients except for sweetcorn in a saucepan and simmer for 20 minutes. Stir occasionally. Lentils will gradually break down and give a thick curry sauce.
  2. Add sweetcorn 5 minutes before serving.
  3. Serve with brown basmati rice. Garnish with coriander leaves if desired.
