Hearty smoothie

This rich, think drink is a fantastic snack in itself or can even be used as a breakfast recipe if you don’t fancy a heavier breakfast, but still need a good blood sugar balancing start to the day.
Serves 2
Ingredients:
½ large avocado
½ tin coconut milk (or make up 200ml from a coconut block)
200 ml apple juice
1 cup of berries – strawberries, blueberries, raspberries or mixture (can be defrosted from frozen or blended well still partially frozen)
Instructions:
- Mix together the ingredients in a blender until smooth.
- Experiment with other juices, fruits and you can also add ground almonds for extra protein.
