Caffeine free iced tea

This twist on an American classic provides lots of antioxidants without the overstimulating caffeine content. Rooibush or redbush tea is available in all supermarkets. Xylitol is a natural sweetener that does not raise blood sugar levels like others, it is available in health food shops and larger supermarkets.
4 large mugfuls of water
4 Rooibush (redbush) teabags
Honey or Xylitol (natural sweetener) to taste
Lemon slices or fresh mint to taste
Serves 4
Method:
- Warm the teapot.
- Boil the water and pour over the teabags in the teapot.
- Brew the tea slightly stronger than you would normally drink it, then remove the teabags and add either the honey or xylitol to taste.
- Let the tea cool down to room temperature, pour into tall glasses, then add the ice and mix until the tea is completely chilled.
Add the lemon slices or fresh mint to taste and serve immediately.
